#garlic planted at the very last possible moment last fall is starting to break ground.

This is on some new property we've not really started on yet and the pH is in the low 5s. This bed got heavily amended with rabbit manure and we'll do foliar fish fertilizer as well to give them a boost as they grow out. I was obviously advised to Lime but it's way too expensive and I am more interested in working with the biology to buffer the pH instead. It's a slower solution but I believe the right one for us.

January 6, 2025. Fermented hot sauces are still important. This is Sosu from the Kirsten Shockey book. The paste is the balance of our 2024 hot peppers, fermented 2023 garlic paste, palm sugar, and fish sauce. The fermentation started October 24th and ended today. Some of the hot peppers were sun dried so the flavor is wonderful and complicated. I harvested my tiny crop of garlic today. Look at those wild curly flower stems! I grew just 6 garlic plants this year, in a repurposed recycle bin, and got larger bulbs than I have got growing them in the ground. These are from hardneck garlic that I bought from Twisted Citrus two seasons ago. I took the last six cloves from my crop last Fall and planted them.
