I made chicken & waffles into a casserole. Cube cooked waffles & (also cooked) breaded+fried chicken & put them in a buttered casserole dish (just the way you’d do the bread in a bread pudding). Then whisk together eggs; buttermilk; a little maple syrup; & salt, pepper, sage, & cinnamon—and pour it over the chicken & waffle cubes. Let it soak for 10 min & bake for an hour. ZOMG, SO GOOD. I’d even say it’s almost as good as Roscoe’s! #YUM
I roasted 3 sheet pans of well-seasoned veggies today—yellow squash, onions, garlic, cauliflower, carrots, asparagus, zucchini, tomatoes—& pureed them into soup with basil & some ginger. I’m gonna have veggie soup all week! #YUM
What's your favorite savory breakfast? Not looking for sweet here: what makes your mouth water (probably eggs, bacon/ham/pork sausage, etc.)?

1/2 c grated carrots
1 c grated apples
1 c buttermilk
1/2 c olive oil
3 eggs
2 c all purpose flour
2 tspn baking powder
1 tspn baking soda
2 tspn grated ginger
1 tspn ground cinnamon
1/2 tspn ground nutmeg
1/4 tspn ground cloves
1/2 tspn salt
