I finally started playing Vampire: The Masquerade -- Bloodlines on Thursday. And... Of course I liked it. Unfortunately I'm limiting my playtime of it to streaming, so I can't let myself just drown in it and emerge after it's done.

Instead, I made a pic of the Tremere lady I named Sophia that I chose as my character! I made a pretty big mess of it, should have gone with more planning and less enthusiasm :D But here she is anyway. I happened to remember to record the process, so you can have that too.

Thai Lentil Red Curry with fresh Tofu Summer Rolls, paried with an incredibly delicious ginger and blood orange gin cocktail made by myself and @sebalicious! We enjoyed entirely to much of this meal in a candlelit setting. And I'm still dreaming of every delicious bite. We sure known how to throw an amazing meal to share.

Stir-Fried Rice Cakes with Pork Belly, Tomatoes, and Spinach from Cooking South of the Clouds, a beautiful book on food of Yunnan province of China.

Coated with egg, pork belly is stir-fried, mixed with mushrooms, vegetables, and seasoned simply with the light soy sauce. Delicious and completely satisfying on its own thanks to sweet rice sticky and chewy ovalettes that are standing here in place of traditional Yunnan er kuai.

Quick and simple, it is perfect for a weeknight dinner but tasty and sophisticated enough to be a part of a weekend banquet.

Rice Krispie Cookies

Ingredients

¼ and ¼ cup butter softened
⅔ cup granulated sugar
¼ cup light brown sugar
1 large egg
1 teaspoon vanilla extract
¼ teaspoon baking soda
½ teaspoon salt
1 cup (140g) all-purpose flour
1½ cups Rice Krispies

Instructions

Preheat the oven to 350°F.
Melt ¼ cup butter in a small bowl in the microwave. Place it in the fridge for 5 minutes to cool down. Then move it to the freezer for 5 more minutes to cool down further while you work on the rest of the dough.
In a medium mixing bowl combine ¼ cup softened butter, granulated sugar, and light brown sugar. Add the egg and vanilla extract and combine.
Add the melted butter from the freezer and combine. The butter should be cool, but not frozen.
Add the baking soda, salt, and flour and combine. Lastly, add the Rice Krispies and stir with a spoon to incorporate them into the dough.
Scoop 2 ½ tablespoons of dough for each cookie. Place the dough on a cookie sheet, about 6-8 cookies per sheet.
Bake the cookies at 350°F as follows:
Bake for 8 minutes, open the oven pick up the cookie sheet with oven mitts and bang the cookie sheet down against the rack in the oven. Be careful not to burn yourself on the rack or oven door.
Bake for 2 minutes, open the oven and bang the cookies again.
Bake for 2 more minutes (for 12 minutes total), open the oven, bang the cookies, and remove the cookies from the oven.

With the cold, freezing weather starting to settle in, I picked the remaining chili peppers from the garden. I ferment them for a month and then cook them into a hot sauce. This happens every year - my ‘End of Summer’ hot sauce. Always different because I always have a different mix of peppers. This year I have Hatch, Calabrian, Aleppo, Lemon Yellow Jalapeño and too many Carolina Reapers.

Meatball pasta bake recipe

Ingredients:

250g wholewheat penne
400g pack 24 British beef meatballs
4 shallots, peeled and quartered
3 clove/s Cooks’ Ingredients Black Garlic, sliced
2 tbsp Cooks’ Ingredients Rose Harissa Paste
90g jar Cooks’ Ingredients Smoked Tomato Paste
1 tsp smoked paprika
125g grated mozzarella
40g Essential Grated Parmigiano Reggiano
Basil leaves, to serve

Instructions:

Cook the pasta for 10 minutes according to pack instructions, reserving some pasta water when you drain it. Preheat the oven to 200ºC, gas mark 6.

Meanwhile, in an ovenproof frying or sauté pan, fry the meatballs for 2-3 minutes until they take colour. Remove with a slotted spoon.

In the same pan, soften the shallots for 2-3 minutes, mixing in the black garlic, harissa, tomato paste and paprika. Fill the empty paste jar with pasta water, put the lid on, shake well, then pour into the pan. Season.

Mix in the meatballs and pasta, then scatter over the mozzarella and bake for 15-20 minutes, until the meatballs are cooked through with no pink meat and the top is melting, golden and crisp at the edges. Serve scattered with basil leaves.
